Are you hitting the water hard enough or going fast enough that you might be getting water into the air intake?
Steam also into the intake from having a heated up engine splashing into water. OP, I've experienced the same on both of my Grizzly 700s. It is really difficult to get an absolute understanding of what could be occurring, steam hitting the intake is not going to be good and may/may not be the issue. Many have reported good luck by taking dielectric grease and creating a water proof seal for the spark plug in the plug wire cap. I did that and it has seemed to help. Just don't fill the entire cap with dielectric grease as the grease can actually be an insulator, use the grease to create a seal with it instead.
